Smashed Avocado with Eggs & Feta
Weekend brunch or easy weekday lunch - whenever you eat this, it's delicious!
- 2 egg
- ¼ avocado
- 20 g cheese, feta
- 2 slice bread, multigrain toasted
Boil the eggs for 10 minutes until hard boiled.
Immediately drain the eggs under cold water, peel off the shell and roughly chop in a small bowl.
Add the avocado and feta to the bowl and mash together with a fork.
Generously spread the mixture over a slice of toasted grainy bread.
Serve and enjoy!
