A tasty side to a mexican meal or dip to snack on!
- 2 avocado mashed
- ½ clove garlic crushed
- ½ lemon juiced
- salt and pepper
- 16 tomato, cherry chopped
- ¼ onion, red finely chopped
Mash the avocado in a bowl with a fork.
Add the juice of ½ lemon and season with salt and pepper to taste.
To spruce it up a little, crush the garlic, finely chop cherry tomatoes and red onion.
Stir these through the avocado and serve immediately with corn chips and vegetable sticks.
